The other diners will watch you with jealousy in their eyes as you team up to demolish the succulent beast, leaving nothing but a platter of bones. And with a whole animal at your disposal, you needn’t stop at the main cuts. Feel free to sample the brains, ears, or even heart, if only to embrace the whole nose-to-tail ethos. Your vegetarian friends don’t need to sit out the adventure, as the animal is served with sides of heavenly, creamy five-cheese mac ‘n’ cheese, johnny cakes, succotash, and, of course salad, because we all still need to eat our vegetables.
