All the bells and whistles of Boystown don’t hide the fact that you’re hard pressed to get a great craft cocktail in the area. Of course, there’s Elixir Lounge, the slick and sexy mixology bar adjacent to house music dance club Hydrate, but Whiskey Trust is on an entirely different level.
First of all, it’s not just a restaurant and bar, it’s a distillery, cranking out millet and rye whiskey and small-batch vodka that’s used in the amazing cocktails on offer. That’s a big draw for you and your pals, who appreciate a good mixology scene. So settle in with your group–either at the long, oval bar in the center of the room or at one of the comfy leather sofas–and catch up over drinks made with both house-made mixers and house-made spirits.
The cocktail menu at Whiskey Trust changes often to complement small bites that also incorporate the spirits. If it’s been a while since your last gathering, order a number of shareable dishes like oysters with an amazing whiskey-and-pickle-juice mignonette, or a daily selection of salumi that comes with whiskey mustard and whiskey honey butter. (You’re probably sensing a theme here.)
The setting is quite welcoming as a starting point to a big evening, as the throwback atmosphere of reclaimed furnishings and easygoing pop tunes help usher you into what’s to come later. You won’t have to go far, as Chloe’s, a dimly lit dance club underneath Whiskey Trust, is a perfect spot to kick the party into high gear. There’s plenty of seating for those who’d rather appreciate high-energy beats while chilling, or you can all take to the dance floor with drinks in hand. Now, that’s what you call mixing it up.
